Consuming rancid fats can cause symptoms of poisoning.

The peroxide value is an indicator of the degree of oxidation of oils and fatty acids, used to measure the degree of rancidity of oils and fats. Generally speaking, the higher the peroxide value, the more severe the rancidity, which is more harmful to the human body.

The relevant detection standards for the above indicators are as follows, and the main detection method is automatic potentiometric titration.
