*Egg powder formula:
Flour: 454 grams
Raw powder: 113 grams
Baking powder: 4 grams
5 eggs (280 grams)
White sugar: 300 grams
Sanhua Whole Milk: 200g
Clear water: 471 grams
Oil: 20 grams
Production process:
1. Pour the eggs into the blender and stir for 20 seconds to make a uniform egg mixture.
2. Pour the mixed white sugar and water into the blender, add light milk, and stir well.
3. Add baking powder and stir for 3 seconds, then add oil, flour, and cornstarch. Stir thoroughly for 20 seconds to fully dissolve the entire slurry.
4. Leave the slurry for 30-60 minutes until the bubbles in the liquid disappear before use.
Egg making method:
Heat the temperature to 170-190 degrees Celsius. Once the temperature is reached, it can be fed onto a grill plate. Close the grill plate and immediately flip it over to bake for about 3 minutes.
